Finally! The weekend promises just a bit of a chill, here in southern Cali. My favorite kind of weekend. A bit of a chill and the time to try a new recipe. Today, I am trying a find from Whole Foods Market.
Whole Foods, offers a lovely selection of produce, natural products and just fun stuff to shop for. A trip to Whole Foods can never be a "run in", as you are captured by an array of new finds. Whole Foods also offers a great website that is chocked full of hints and recipes. You don't need to live near their market to take full advantage of their tasty recipes.
Today, I am trying this find of Mexican Taco Stew. It looks quick and easy, and I can play with the ingredients a bit and make it more to our tastes. I will double the stock base, use chicken breasts chopped in place of the ground meat and add lots more veggies. I will serve it with a few warmed tortilla strips, a bit of shredded cheese and a dollop of salsa, for a bit of punch.
Saturday night dinners are usually very casual around our house. We kind of hang out and play wii or watch a movie and pop some popcorn. This Taco Stew, is a quick and easy meal that offers fast clean up and the promise of some great left overs. Try it and we can compare our results. ...enjoy the night!
