Sunday, at our house and your house too! Often our Sunday routine means a big breakfast. In an effort to start the week off as a family, we sit down and enjoy some conversation and a serving of made from scratch pancakes, juice, fruit ....Typical Amerian fare.
I am not a huge fan of pancakes, but I love to make them. I love making blueberry pancakes especially. We are not huge fans of syrups, and since I am trying to add more proteins and less carbs at the table, I came up with this faux crème fraîche . Perhaps, your family would like it too.
A few things to ponder:
You can make this as fat free and sugar free as you like. I have used all fat free choices and all non-sugar options ....All are good.
You may also make this as full fat and sugar full as you like. Let your conscience be your guide.
All fruits are "do-able". When using fresh, keep your family in mind, choose their favorites.
Make extra, your fans will use this the next day on left over pancakes or even frozen waffles or plain yogurt ...okay, okay the recipe.
Chrissi B's Faux Crème Fraîche
2 cups of either sour cream (any vairety ...low fat, non fat, all fat) OR 2 cups of plain or vanilla yogurt ...again you decide on what kind works best for your family.
1 cup of blueberries, or other fruit
sweetner to taste (I use sugar free, but you decide)
Cinnamon
Real Vanilla
Finally, ..... Warm a saute pan and toss the fruit over a medium heat until it releases it's juices, you may add a teaspoon of water if needed. Add sweetner, Cinnamon and Vanilla. Cook a few more minutes, reducing the heat to low. Remove from heat. You may taste test for Cinnamon/sweetness ratio and add more Vanilla here too. Do not make it too watery or you will need more sour cream.
In a larger bowl, whisk your sour cream or yougurt, here is where you want just to blend all the liquid from the container. Add a bit of sweetning if you prefer (I do not), now gently fold in your warmed fruit mixture. Mix until just blended and serve over fresh pancakes, waffles, other fruit .....enjoy!
